Believe it or not, I had trouble sleeping last night, because I was thinking about this meal/what I would put into it. Haha.

Herby Polenta and veggie “sausage” patties, served over a classic Italian Marinara. Italian Marinara (by that I just mean something good and garlicy… add a little parsley and basil *if you buy a regular/pre-made and it’s not already in there).

Polenta Patties:

3 cups water
1/4 t salt
1 cup coarsely ground yellow cornmeal
1 t basil
1 t parsley
1 t garlic powder
1/4 t black pepper

1. In a medium saucepan, bring the water and the salt to a boil over high heat.

2. Mix together cornmeal, herbs, seasonings. While constantly whisking with one hand, slowly shake in the cornmeal with other hand. Lower the heat to medium and cook, stirring frequently, until the polenta thickens, 15-20 minutes. Turn burner off and allow polenta to sit/thicken for about 10 minutes.

“Sausage Patties”

1 c textured vegetables protein (depending on where you live, you might be able to find this in your bulk section) - you can also look for “Bob’s Redmill TVP”
1 t thyme
1/2 t fennel
1 t sage
1/2 t cumin
1/2 t ground coriander
1/4 t crushed chilies (can omit if you’re not into spicy)
1 c boiling water
1/4 c flour (I used pastry flour, because it was just what I had. Not ideal. Use wheat or reg. if you have it)
2 eggs

*olive oil

Mix together protein and spices. Pour boiling water over the mixture and allow it to sit about 5 minutes, until water is absorbed. Stir in flour and eggs. Heat the oil over medium heat in skillet. Shape the mixture into small pieces and brown on both sides.
Spoon polenta on top of sausage/layer as you see pictured :)
