So I’ve been crazy busy lately with moving into a new place and the New Year and all, but here’s what I’ve been up to - This was meatless Monday: Johnny Cakes topped with soyrizo, scrambled eggs and avocado.
I was fortunate enough to grow up with a very southern grandmother who would make Johnny cakes all the time and I enjoyed them so much. My grandmother would serve them most of the time with big savory meals that she made on Sunday afternoons, but as a child I ate johnnycakes with butter and honey. It was a lot of fun making a quick savory meal out of these. I hadn’t had them in about ten years and I enjoyed them just as much as I remember. Here’s a quick recipe, try them out :)
Johnnycakes
2/3 cup corn flour 1 tsp baking powder pinch of salt 1 egg 3/4 cup water
Combine the corn flour, baking powder and salt in a bowl. Stir in the  remaining ingredients until mixed well. Cook in a skillet on medium  heat. Flipping when browned on one side.
Not my grandmother’s recipe, but good none the less :)
